Our herd is pasture-reared and free roaming. Each animal benefits from the highest possible standards of care and attention. The calves are weaned naturally and always remain with the herd. It takes them a minimum of 30 months, and sometimes longer, to reach slaughter weight.

We do not use hormone implants and very rarely antibiotics on cattle for meat. None of our animals are routinely medicated to improve growth rates.

Our grass-fed beef is hung and dry aged for a minimum of 28 days.

Dry ageing

The key effect of dry ageing is to enhance the concentration and saturation of the natural flavour. Dry ageing also makes the meat more tender.

The process changes beef by two means. Firstly, moisture is evaporated from the muscle. This creates a greater concentration of beef flavour and taste. Secondly, the beef’s natural enzymes break down the connective tissue in the muscle, which leads to more tender beef.

Pasture-reared animals produce beef that is lower in saturated fat content and higher in total omega-3 fatty acids (good fats) than grain-fed beef. It also has a healthier ratio of omega-6 to omega-3 fatty acids.

All our Galloway Meat is vacuumed packed in strong plastic bags which should enable it to be frozen with a life span of 18 months or more if required. The Beef is  dry aged for a minimum of 28 days.
